Healthy Apple Cranberry Waldorf Salad
Apples are a delicious healthy food, easy to carry for snacking, low in calories, a natural mouth freshener, and they are still very inexpensive. The old saying of “an apple a day, keeps the doctor away” has a good deal of merit. Eating one or more apples a day may lower your risk for Alzheimer’s disease and cancers of the breast, colon, and prostate as well as numerous other conditions. To get the full benefit you must also eat the skin.
This apple waldorf salad recipe is a crunchy, sweet and hearty salad of apples, celery, nuts and mayonnaise that was first served in the Waldorf-Astoria Hotel in New York City around 1891. You can make it a delicious summer luncheon main dish by adding cooked, diced chicken and another 1/3 cup mayonnaise, also some halved red or green seedless grapes as well as cranberries in addition to the apples.
Ingredients:3 or 4 apples, unpeeled, cut from the core, and chopped into bite size pieces (about 3 cups)
1 tablespoon lemon juice
1 1/2 cups chopped cranberries
1 cup seedless green grapes, halved shopping list
1/2 cup seedless red grapes, halved
1/3 cup raisins
2/3 cup chopped celery
1/3 cup walnuts (optional)
1/3 cup low fat mayonnaise
1/2 tablespoon sugar or sweetener
Preparation:Don’t bother peeling the apples unless their skins are really unattractive. Cut up 3 or 4 of them, until you get about 2-1/2 or 3 cups of chopped apples. Sprinkle the lemon juice over the apples. The acid in the lemon juice prevents the apples from turning brown.
The raisins will taste best if you plump them first. Do this by measuring them into a cereal bowl and adding enough warm tap water to cover them completely. Allow them to sit for a few minutes, absorbing the water, and softening up. Drain them very well when you need them.
I actually squeeze them to make sure they are very dry. Chop up the celery, it should take about 2 stalks or so. I add black walnuts because I get them for free, but you can use regular walnuts or omit them completely if you don’t have any handy.
Mix everything together in a medium sized bowl with the low fat mayonnaise and sugar, coating all of the ingredients with the mayonnaise.
It is now ready to serve, or you can chill it overnight and serve it tomorrow instead. This is so crunchy and chewy, it is a perfect contrast for a meal which is soft, or easy to chew. This apple waldorf salad recipe serves 6.
*Here I'd like to tell you about my favorite diet program that uses a lot of the healthy lower GI foods: Isabel de los Rios' 'The Diet Solution Program'.
The Diet Solution Program favours a long term health orientated approach to fat loss, but not offering anyone a quick fix to their weight troubles. It has loads of valuable data and research to support its approach. I personally investigated the program thoroughly and my mum has been using it for a while now. I have to say she got some great results.
The nutrition plan is one of the healthiest we have seen, a strong core focus on vegetables, fruits, vitamin dense foods, lean proteins, select dairy produce and a clear approach to not expecting one diet to work for all body types. So give it a try and let me know how you’re doing.*Original Apple Waldorf Salad Recipe
