Baked Corn Casserole Recipe

If you're looking for a special corn recipe, Baked Corn Casserole is a classic for company meals or for pot luck dinners.

This Baked Corn Casserole from the Isa Chandra Moskowitz/ Terry Hope Romero vegan-bible Veganomicon takes longer than simply boiling up corn for a side dish, but it’s definitely worth the extra effort. You have a rich and colorful corn casserole that tastes just as fabulous as it looks.

This corn recipe is especially popular when the fresh corn comes in and Southerners are looking for some variety for serving corn, but it can be made year round with frozen or canned corned.

Anyway, the dish is really good and you can make your own alterations according to your taste and what you have in your fridge. So try it out, you won't regret that you did!


Baked Corn Casserole Recipe

Ingredients:


- 2 tbsp vegetable oil

- 4 cups fresh corn but you are welcome to use frozen and you won't notice much difference.

- 1 green bell pepper, chopped finely

- 1/4 cup jarred jalapeno, chopped finely

- 1/2 cup coconut milk

- 2 tbsp Xanathan gum

- 1/2 cup cornmeal

- 1 tbsp pure maple syrup

- 1 cup green onions, finely chopped

- 1/2 tsp salt

- 1/4 tsp cayenne

- 1/2 tsp of Penzey’s Arizona Dreaming spice blend, but this is optional, don't worry if you don't have it.


Preparation:

- Pre-heat oven to 350 degrees. Grease a 8×8 casserole dish.

- If corn is frozen, thaw and drain. Saute along with the bell pepper and jalapenos, until the corn is lightly browned.


- Mix together the Xanathan Gum and the coconut milk until the Xanathan Gum disappears.

- In a food processor, combine 2 cups of the corn-pepper mixture with the coconut milk-Xanathan Gum. Pulse until pureed, but not completely smooth.

- In a mixing bowl, combine the pureed mixture with the remaining corn, cornmeal, maple syrup, green onions, salt, cayenne, and any other spices you want to use.

- Spread the batter into the casserole dish and bake for about 40 minutes.
