Barley Casserole

This delicious vegetarian barley casserole recipe can be served as a vegetarian main dish or a side dish.

This casserole was actually my first attempt at making a vegetarian casserole with barley, The results were as tasty and comforting as I'd remembered.

Barley is an ancient cultivated food, and it adds lots of dietary fibre and carbohydrates with almost no fat. Barley can be a great addition to any healthy chef’s kitchen.

Prep time: 10 min. Cooking time: 1:20

Time from start to eating: 1:30

Makes enough for 3



Vegetarian Barley Casserole Recipe Ingredients:

1/2 large onion, chopped

6 small tomatoes, chopped

1 cup pearled barley

3 cups water

1 tbsp Italian Herb Mix

Salt

1 1/2 cups broccoli florets

1-2 Tbsp balsamic vinegar


Vegetarian Barley Casserole Recipe Directions:

Put the onion, tomatoes and barley in a large baking dish. Add enough water to come up to the level of the vegetables and barley. Stir in the herbs and some salt, and put the dish into the oven at about 350 degrees F for 1 hour.

After an hour, stir in the broccoli and balsamic vinegar and put the dish back in the oven for about 20 minutes, or until the barley is very soft and large. Enjoy it with some nice red wine.
