Wholemeal Banana Coconut Cake

This recipe makes the best banana cake that is dense and moist with a smooth creamy icing. The cake doesn't rise much so it has a nice flat top for presentation. We served the cake at room temperature and topped each slice with a little passion-fruit pulp.

It is made with brown sugar, egg, wholemeal flour and a delicious combination of lemon rind, coconut and banana. You will need about 2-3 large bananas for this recipe.

Cover the banana cake with a layer of citrus frosting and toasted flaked coconut or lemon-coated banana slices, if you wish for a lovely presentation.

*Servings: 21cm Bundt cake
Preparation time: 15 minutes
Bake time: 45 minutes

You can use any cake pan for baking the wholemeal banana coconut cake. Personally, I like using the Bundt cake pan because the cake looks gorgeous when glazed with icing – like a professionally baked gourmet cake!


Ingredients for Best Banana Cake:

• 3/4 cup self-raising flour

• 3/4 cup wholemeal self-raising flour

• 1 teaspoon baking soda

• 1/2 cup unsalted butter, softened

• 2/3 cup brown sugar

• 3 eggs

• 2 over-ripe medium (2/3 cup) bananas, mashed

• 1/3 cup dessicated coconut

• 2 teaspoons grated lemon rind

• Pinch of salt


Directions for Cake:

• Preheat oven to 350ΊF/180ΊC.

• Using electric mixer, beat butter and sugar until light and creamy.

• Add in eggs, beat until combined.

• Transfer mixture to a larger mixing bowl and add bananas, coconut and rind. Fold in salt, baking soda and flour. Stir until just combined and the mixture is almost smooth.

• Pour mixture into a greased and floured pan and bake for 45 minutes, or until a wooden pick comes out clean.


• Allow to cool before removing from pan. Finish cooled cake with icing, if desired.


Ingredients for Icing (optional):

• 1/2 cup icing sugar

• 1 teaspoon butter, softened

• 2 tablespoons milk

• 1/2 cup toasted flaked coconut or lemon-coated banana slices


Directions for Icing:

• Sift icing sugar into bowl.

• Stir in butter and milk to make a firm paste.

• Stir over hot water until icing is spreadable; do not overheat.

• Spread icing over cooled cake immediately, followed by flaked coconut or banana slices.
