Greek Salad

Greek Salad

In this Greek salad recipe, lettuce, plum tomatoes, red onion, green peppers and cucumbers are dressed with a special olive oil dressing and finished with crumbled feta cheese. Serve this with a high fiber crusty bread.

Best Greek Salad Recipe

Ingredients:

Dressing:

• 6 tablespoons olive oil

• 1 1/2 tablespoons fresh lemon juice

• 1 tablespoon red wine vinegar

• 2 garlic cloves, minced

• 1 teaspoon dried Mediterranean oregano

Salad:

• 1 head romaine lettuce, torn into bite-size pieces

• 3 large plum tomatoes, seeded and coarsely chopped

• 1 English cucumber, peeled and coarsely chopped (the long, thin, almost seedless ones)

• 1 medium red onion, cut into thin rings and soaked for 10 minutes in a small bowl of ice water to make it less sharp

• 1 small green pepper, cut into thin rings

• 3/4 cup kalamata olive

• 3/4 cup crumbled feta cheese

Preparation:

• Whisk dressing ingredients together until blended.

• Season to taste.

• Drain onion from ice water and pat dry with paper towels.

• Toss with dressing.

• Sprinkle cheese over and serve.

*Here I'd like to tell you about a healthy diet program that uses a lot of the lower GI foods: Isabel de los Rios' 'The Diet Solution Program'.

The Diet Solution Program favours a long term health orientated approach to fat loss, but not offering anyone a quick fix to their weight troubles. It has loads of valuable data and research to support its approach. I personally investigated the program thoroughly and my mum has been using it for a while now. I have to say she got some great results.

The nutrition plan is one of the healthiest we have seen, a strong core focus on vegetables, fruits, vitamin dense foods, lean proteins, select dairy produce and a clear approach to not expecting one diet to work for all body types. So give it a try and let me know how you’re doing.*
