Light Tuna Egg Macaroni Salad Yummy Fiesta Macaroni Salad

Here is a healthy and interesting variation to your usual macaroni salad. By adding tuna and eggs, it becomes more then the average, mayonnaise heavy,macaroni salad you will find at barbeques.

It is filling and nice enough to be a main meal, even better if served with iced, unsweetened tea, in warm weather...there’s nothing like a cold pasta salad when the temperature is soaring.


Ingredients:

1 cup elbow macaroni, uncooked

2 (6-ounce) cans tuna, water pack, drained

4 hard cooked eggs, finely diced

1/4 cup celery, chopped

3/4 cup carrots, grated

1/2 cup low fat salad dressing- better if similar to mayonnaise

2 Tablespoons onion, minced

1/4 teaspoon pepper


Directions:

1. Place water in large saucepan and bring to boil. Add macaroni and cook until tender, about 6 to 8 minutes. Drain.

2. Combine macaroni, tuna, eggs, celery, and carrots in a large bowl.

3. Stir together salad dressing, onion, and pepper. Spoon dressing over salad; toss until evenly combined.

4. Chill until ready to serve.


*Makes 4 Servings, about 1-1/2 cups each

Total fat 30 grams

Saturated fat 5 grams

Cholesterol 237 milligrams

Fiesta Macaroni Salad

Ingredients:

4 cups cooked macaroni

2 cups seeded and chopped tomatoes

1 cup seeded and chopped cucumber

1/2 cup finely chopped red onion

1/2 cup finely chopped celery

1/2 cup finely chopped green bell pepper


1/2 cup finely chopped red bell pepper

1 cup rice wine vinegar

2 tablespoons minced black olives

1 bay leaf

1 teaspoon dried parsley

1/2 teaspoon dried thyme

1 clove garlic, minced

3 to 4 dashes Tabasco sauce

1/4 teaspoon ground black pepper


Directions:

Combine all ingredients in a large bowl and mix well.

Cover and refrigerate for 4 to 8 hours to allow flavors to blend. Remove bay leaf prior to serving.

*Recipe makes 10 servings; serving size: 6 ounces
