Chicken Quesadilla Recipe

This chicken quesadilla recipe makes a beautiful and filling meal as it is loaded with spinach, cheese and chicken. I like to have it with some plain low-fat yogurt and avocado mango salsa on the side, really delicious!Spinach and Chicken Quesadilla Recipe
Ingredients:*2 servings
• 4 large flour tortillas
• 1/4 cup mozzarella cheese, grated
• 1/4 cup cheddar cheese, grated
• 1 lb boneless, skinless chicken breast
• 2 cups fresh spinach leaves
• 1 teaspoon oregano, dried and crushed
• 1 teaspoon basil, dried and crushed
• Salt
• Pepper
• Butter or olive oil
Preparation:• Cut chicken into thin strips. Heat a greased (with butter or olive oil) frying pan over medium heat on the stove. Sprinkle salt, pepper, oregano, and basil over chicken strips, and place them into pan. Sautee chicken in pan until cooked.
• If cooked spinach is desired, add spinach to the pan, and cook for a few minutes with the chicken. Remove ingredients from pan and set aside.
• Grate cheeses, and mix them together in a bowl. Heat a clean frying pan over medium heat, or a turn on a quesadilla press. If using a pan, grease lightly with butter or oil. Place a single tortilla in the pan or on the press.
• Sprinkle a quarter of the mixed mozzarella and cheddar cheese around the top of the tortilla. Then, add 1/2 of the chicken, spread about on top of that, and 1/2 of the spinach on top of the chicken. Sprinkle another quarter of the cheese on top of all of that, and set a second tortilla on top of the cheese, chicken, spinach, and cheese. If using a press, close it now, and cook for about 3-5 minutes until the cheese has melted and the tortilla has begun to brown.
• If using a pan, cook for about 2 minutes on the first side, then carefully flip, and cook for another couple of minutes on the second side. After it is cooked, remove the quesadilla from the press or pan, and cut into sixths. Repeat with remaining ingredients for second snack. Serve with a little sour cream, if desired.
