Cinnamon Sour Cream Coffee Cake

Cinnamon Sour Cream Coffee Cake

This cinnamon coffee cake recipe is great to have in your menu. It is low in fat and cholesterol, takes such little time to make and I am always pleased with the results.

Low-Fat Sour Cream Cinnamon Coffee Cake Recipe

Ingredients:

1 C. fruit-based fat replacement or unsweetened apple sauce

2 1/2 C. granulated sugar, divided use

2 tsp. pure vanilla extract

1 C. liquid egg substitute

1 1/2 C. unbleached all purpose flour

1 1/2 C. wholemeal flour

2 tsp. baking powder

1 tsp. baking soda

1 tsp. salt

2 C. fat-free dairy sour cream

2 Tbs. ground cinnamon

1/2 C. chopped walnuts, toasted

Directions:

• Heat oven to 350 degrees. Grease a 10-inch tube pan. In large mixing bowl, combine fat replacement and 2 C. sugar; beat until fluffy. Stir in vanilla. Add liquid egg substitute, 1/4 C. at a time, beating after each addition.

• In another bowl, combine flour, baking powder, baking soda and salt; add alternately with sour cream to other mixture, beating enough after each addition to keep batter smooth. Spoon 1/3 batter into prepared pan.

• In a bowl, combine cinnamon, nuts and remaining sugar. Sprinkle 1/3 of the mixture on batter in pan. Repeat layers of batter and cinnamon mixture 2 more times.

• Bake in heated oven 1 hour 10 minutes or until knife inserted in center comes out clean. Remove from oven and cool on wire rack 10 minutes. Remove from pan and cool completely on wire rack before serving.

*Hope you enjoyed this cinnamon coffee cake recipe, now I'd like to tell you about my favorite diet program that uses a lot of the healthy lower GI foods: Isabel de los Rios' 'The Diet Solution Program'.

The Diet Solution Program favours a long term health orientated approach to fat loss, but not offering anyone a quick fix to their weight troubles. It has loads of valuable data and research to support its approach. I personally investigated the program thoroughly and my mum has been using it for a while now. I have to say she got some great results.

The nutrition plan is one of the healthiest we have seen, a strong core focus on vegetables, fruits, vitamin dense foods, lean proteins, select dairy produce and a clear approach to not expecting one diet to work for all body types. So give it a try and let me know how you’re doing.*
