Imitation Crab Salad

Most supermarkets have at least a small fresh seafood section where you can buy imitation crab in just the amount you need.

If not, you can also find it packaged in the refrigerated food case. It is much cheaper to make it yourself, and you can adjust the flavors at will.

Imitation crab (also known as surimi) is made from fish so it is a good choice for those who cannot eat shellfish. Serve imitation crab salad as a salad topper, sandwich spread, chunky dip, or appetizer cracker topper.


Imitation Crab Salad Recipe

Ingredients:


½ pound imitation crab, cut in small pieces

2 packets Alfredo noodle mix

½ pound fresh mushrooms

Creole seasoning (to taste)


Croutons:

1 tablespoon olive oil

1 teaspoon garlic powder

½ teaspoon paprika

¼ teaspoon nutmeg

Salt to taste


Preparation:

Cook the noodles according to the instructions on the package and keep aside. In a small pan, saute the mushrooms with a dash of olive oil. In a large bowl, mix the imitation crab pieces and mushrooms with the noodles.

Now add the seasoning, garlic powder, nutmeg and salt to taste and mix well. Transfer the contents of the bowl to a well greased casserole dish and add the paprika and crushed croutons. Bake this dish in a preheated oven at 190 ºC for about 20 minutes.


Imitation Crab Salad Recipe with Italian Dressing:

Ingredients:

1 pound frozen imitation crab meat, chopped into small pieces

3 tablespoon Italian dressing

1 medium sized onion, finely chopped

2 boiled eggs, chopped


Seafood seasoning to taste

1 teaspoon mustard

2 cups Kraft dinner, cooled and mixed with cheese

2 stalks celery, chopped in small pieces

Sweet or dill pickles, chopped

1 teaspoon parsley flakes

1 tablespoon mayonnaise

1 teaspoon garlic powder

1 medium bell pepper, chopped finely

Salt to taste


Preparation:

In a large bowl, mix the imitation crab meat, onion, pepper, celery and the rest of the ingredients and combine well till it gets the thickness of a potato salad. Add the Italian dressing and mayonnaise and marinate it for about 2½ hours. Serve this salad with fried fish or boiled craw fish.
