Mango Banana Delight

Délice aux Mangues et aux Bananes

Mango, banana and raspberry combination works wonderfully in this French mango banana delight recipe but you are more than welcome to use other fruits that you prefer.

Fromage Blanc is a French cheese that tastes like cottage cheese, with the texture of sour cream. There is also a "non-beaten" French country version that has the same texture as cottage cheese. Feel free to use the cottage cheese in your supermarket, it won't make too much of a difference.

*Preparation Time: 15 minutes
Serves 4 people


Ingredients:

1 Ripe Mango

1 Ripe Banana

1 tsp. Lemon Juice

1 tsp. Sugar (or Splenda)

1/2 Cup Raspberries

2 Cups Fromage Blanc - low fat or non fat (use cottage cheese if you can't find the authentic French fromage blanc)

1 tsp. Apricot Jelly (or 1 tsp. Sugar or Splenda)


Preparation:

• In a bowl, stir lemon juice and 1tsp. sugar. It keeps the fruits fresh and colourful!

• Slice Mango and Banana. Put in bowl with lemon juice and delicately stir, so that fruits are evenly covered.

• In a finely-meshed strainer, press raspberries with the back of a spoon. Keep pressing and rubbing until all the juice has been extracted… the strainer should be thin enough to catch the seeds.

• In a small pot, on a low flame, melt apricot jelly with raspberry juice. Stir. Taste, and if you want to add a little sugar or splenda, go ahead.

• Distribute fromage blanc, or cottage cheese, into individual bowls. Cover with fruits, and then with raspberry sauce.
