Making fresh pasta from scratch..

Making pasta will never be as cheap as buying the dried stuff but it is a lot of fun and very satisfying to eat a plate that you've created from scratch. It tastes great too and kids love shaping the pasta!

You will find plain, egg semolina and herb pasta dough recipes on this page, enjoy!


Basic Pasta Dough Recipe

Ingredients:


• 400 g Plain Flour

• 4 free range Eggs

• Sea salt


Preparation:

• Turn the flour on to the bench.

• Make a well in the middle and add the whisked eggs in to the well.

• Slowly incorporate the flour, using your hands and bring the dough together.

• Wrap in a clean tea towel and rest 20 minutes.

• After 20 minutes, work the dough with your hands for about 5 to 10 minutes. Work it into a rectangular shape using a little extra flour.

• Open the pasta machine to the biggest setting and put the dough through.

• Fold the dough into 3 after each turn then turn the dough 90 degrees and repeat the process.

• Roll the dough to about 2mm thick and hang over a broom stick to dry.

• When the pasta sheets are dry, they can be cut into the desired noodles.

Egg Semolina Pasta Dough Recipe

Ingredients:


• 1-1/2 cup very finely ground semolina flour

• 3/4 cup all-purpose flour

• 3 eggs

• 3/4 teaspoon salt

• 1 tablespoon olive oil

• 1 tablespoon lukewarm water


Preparation:

• To make this or any other dough in a food processor, put all of the ingredients in the bowl.

• Pulse until the mixture begins to form a ball. Add a little water if dough is dry.

• Remove dough from the bowl, form into a rough ball and let rest 10 minutes.

• Continue as directed above for Plain Pasta Dough.

* Do not use this dough for machine made pasta because the dough may tear. It is best rolled out by hand.

Herb Pasta Dough Recipe

Ingredients:


• 2 1/4 cups all purpose flour

• 3 eggs

• 3/4 tsp salt

• 1 Tbsp olive oil

• 1 Tbsp lukewarm water or milk

• 2 Tbsp finely chopped fresh parsley

• 1 Tbsp finely chopped fresh marjoram, or 1 tsp dried

• 2 Tbsp finely chopped fresh basil, or 1 tsp dried

• 1 Tbsp finely chopped fresh thyme, or 1 tsp dried


Preparation:

• In a large bowl place the flour and make a well in the center.

• Add the eggs, salt, olive oil, and water or milk. Then add the herbs using your hands, work the dough together. Keep working till the dough forms a ball.

• Turn the dough onto a lightly floured board and knead, adding more flour if needed, until smooth. The kneading will take about 10 min.

• Cover with a bowl or cloth and let the dough rest for 30 min.

• Use a manual pasta machine and cut the pasta into fettuccine or any other string pasta you wish.

*A butter, olive oil or tomato sauce is good with this recipe.
