Fresh Peach Coffee Cake (with Wheat-Free Option)
This peach coffee cake recipe calls for real peaches rather than canned peaches or preserves. It is much nicer. Don't know what to do with all those peaches? Bake a peach cake!Peach Coffee Cake Recipe- Ingredients:
Streusel Topping:1/2 cup organic sugar
1/2 cup organic all-purpose flour or spelt flour
1 tsp. ground cinnamon
1/8 tsp. Himalayan or sea salt
1/4 cup unsalted organic butter, softened
Batter: 2 cups organic all-purpose flour or spelt flour
1 tsp. aluminum-free baking powder
1 teaspoon baking soda
1/2 tsp. Himalayan or sea salt
1/2 cup unsalted organic butter, softened
1 cup organic sugar
3 large eggs, preferably organic and free-range
1 cup plain organic whole milk yogurt
1 1/2 tsp. vanilla extract
1 cup peaches, peeled and sliced thin (or 1 cup berries)
Peach Coffee Cake Recipe- Preparation: • Preheat the oven to 350°F (325°F if using a glass pan).
• Butter a 9-inch Bundt or tube pan, or use a deep dish pie pan or a 9-inch springform pan. Make the streusel by combining the sugar, flour, cinnamon, and salt if using.
• Cut in the butter to resemble coarse crumbs. Make the batter by first mixing together the flour, baking powder, baking soda, and salt. Set the flour mixture aside.
• In a large mixing bowl, beat the butter until smooth, then add the sugar and beat until light and fluffy, several minutes. Beat in the eggs, one at a time. Blend in the yogurt and, vanilla.
• Remove bowl from mixer and stir in the flour mixture. Spread half of the batter in the prepared pan.
• Add a layer of peaches, then sprinkle with half of the streusel. Add the remaining batter and sprinkle with the rest of the streusel. Bake until the cake is golden and a toothpick inserted in the center comes our clean, 45-50 minutes.
• Allow to cool before slicing. Wrap well and store at room temperature for up to 2 days or refrigerate or freeze for longer storage.
Serving Suggestions:Feel free to add walnuts or pecans to the streusel topping. You may also add chocolate chips to the streusel and/or the cake if you are not using fruits, keep it healthy by using organic 70% dark chocolate.
