Peppered Swordfish

Glycemic Index (GI) is a method of classification of carbohydrate containing foods on the basis of the speed of their absorption in the blood sugar levels.

GI is used by doctors to control blood sugar levels and by dietitians to treat obesity and manage weight. Consumption of foods containing high GI increases the blood-sugar levels of the body. This can even be fatal for people suffering from diabetes.

An important dish that is low in glycemic index is the Peppered Swordfish. The preparation of the dish involves five to six steaks of swordfish. Other important ingredients like white wine, a quarter cup of lemon juice, one teaspoon of soy sauce and quarter spoon of Worcestershire sauce are also required. It is essential to blend all these ingredients properly.

After this condiments like ground pepper, cayenne pepper, clove garlic and salt should be added to the mixture and rinsing should be done adequately. The swordfish should be properly rinsed under ice-cold water and then dried well. The fish should be dipped in marinade and turned once on each side.

Grilling of the fish on each side should be done for at least fifteen minutes. Then the fish should be added to the ready mixture and must be cooked till the fish attains a golden brown color.

Garnishing of the fish should be done using green onions and lettuce leaves. The swordfish tastes even better if served with vegetable gravy, preferably on the side.

It is very low in calories and provides hours of fullness in my experience, hence helping with weight loss and control.
