Excellent meal with Low GI..
Roasted Mushroom and Lentil Cakes is an excellent food with low GI- glycemic index.The preparation involves the boiling of lentils for about ten minutes; followed by removing the scum of the mushrooms as well as chopping the walnuts and the onions. Then the lentils need to be drained and cooled.
Finally the lentils have to be added to the mixture and mixed and rinsed with the hands. A baking tray should be greased with some butter, followed by making evenly sized cakes of the mixture and placing them on the platter and
baking it for about thirty minutes. Sweet potatoes, carrots and cherry tomatoes should be roasted at the same time and served together with the cakes. My roasted mushroom and lentil cakes taste really good if served along with
vegetable gravy.Glycemic Index (GI) is a way of classifying carbohydrate containing foods according to how fast they can raise blood-glucose levels in the body. Foods which have higher GI cannot control blood sugar levels. Low GI foods reduce hunger and give a full feeling. They control heart disease and keep desirable cholesterol levels.
Breakfast should consist of either whole-wheat bread or dishes made of oats or porridge with skimmed milk. An apple can be added as it also stimulates insulin secretion. Citrus foods are also recommended.
Lunch should include vegetables and low-fat curd or yogurt.
Dinner can be of vegetable soup, vegetables and a piece of chicken. Apart from these, fibrous foods should be included in the diet to give a fuller feeling.
