Yummy salmon burgers
One of the hardest things about a salmon burger recipe is keeping it all together while it is on the grill or cooking in the pan. It is no nice watching your fish fall through the grates of your BBQ grill. With too much binder your burger will turn out soggy and with too much breadcrumbs it will be all you taste. You really need to find the right balance between fish, binder and breadcrumbs.
This healthy salmon burger recipe is a quick, delicious and nutritious way of serving up canned salmon. You can enjoy this with or without the dressing, in a hamburger or brioche bun, or with a salad.Healthy Salmon Burger Recipe
Ingredients:*Makes 4-5 regular burgers12 oz (2 x 6 oz cans) skinless, boneless salmon packed in water
6 oz (1/2 box) very soft tofu
1 packet (about 50 grams) plain instant oatmeal
1 tsp paprika
1 tsp dill
1/2 tsp fresh ground pepper
1/2 cup regular cheerios, crushed fine (you can also use bread crumbs or crushed croutons, but watch the sodium content)
Brioche buns (or halved hot dog buns for sliders)
*Oatmeal adds dietary fiber to your burger and they offer several health benefits such as reducing cholesterol. They also help the burgers retain moisture and keep their shape better.
*Tofu is used instead of oil or mayo to help keep the burger mixture together. Tofu is low in fat- especially saturated fats, it is a great source of iron, protein and B vitamins, and iron.
*Fishy taste is reduced in this recipe so the texture is lighter than normal.
Preparation:*Prep: 10mins
Cooking: 10mins • Drain the salmon and put it in a medium mixing bowl.
• Add the tofu and instant oatmeal, and mix together with a fork until it is a uniform consistency.
• Season with paprika, dill, and fresh pepper.
• Form into balls and roll in crushed cheerios.
• Gently flatten out into thick patties, approx 1 inch thick (you’ll flatten them more when cooking).
• Heat olive oil in a heavy-bottomed pan on medium high.
• Fry patties until golden brown, about 3-4 min on each side.
• Flatten slightly with spatula to achieve desired diameter/thickness.
• Serve on toasted brioche buns with lettuce, tomato, onion and tartar sauce or cocktail sauce on the side, plus a generous portion of sweet potato fries.
