Delicious Salmon Loaf

I love salmon and am always game for experimenting with new salmon recipes. Salmon loaf recipes on this page are two of my favourites with lighter than healthier ingredients than your usual salmon loaf recipes.

Salmon has a great reputation for being health-supportive food based mainly on its unusually high omega-3 fatty acid content. It is very common for 4 ounces of baked or broiled salmon to contain at least 2 grams of omega-3 fats - more than the average U.S. adult gets from all food over the course of several days.

Salmon also contains excellent amounts of tryptophan, protein- amino acids, vitamin D and selenium. It is, without a doubt, one of nature's purest and healthiest foods..


Salmon Loaf Recipe

Ingredients:


1 can of salmon

1 small onion finely diced

1 small carrot (grated)

2 stalks celery finely diced

1 tsp crushed fresh garlic

1 tsp dried or fresh basil

1/4 cup milk

3 eggs

Salt and pepper

1 Tbls extra virgin olive oil

Juice and zest of one lemon

4 slices of wholegrain bread


Preparation:

• Preheat oven to 180C (350F) Chop bread in food processor to make breadcrumbs then set aside. Drain salmon and set juice aside (do not discard).

• In a large bowl, break up salmon. Add bread crumbs, lemon juice, zest, basil, olive oil, onion, carrot, celery, garlic and 2 lightly beaten eggs. Combine thoroughly. You can also add 1/4 cup of shaved parmesan if you have it handy.

• Pat into a well greased loaf tin. Mix milk and remaining two eggs (lightly beaten) together with reserved salmon juice and pour over top.

• Bake in preheated oven for 35-40 min until it is golden brown. Serve with salad or steamed vegetables.

Mustardy Celery Salmon Loaf Recipe

Ingredients:


14 ¾ oz can salmon

1 cup grated parmesan

2 cups seasoned stuffing croutons

¼ teaspoon ground mustard

2 beaten eggs

2 sliced celery stalks

1 cup chicken broth


Preparation:

• Cut three strips of heavy duty aluminum foil, measuring 20 by 3 inches.

• Arrange them across the base and up the sides of a cooking spray-coated 3 quart crockpot.

• Combine the parmesan, croutons, mustard, eggs, celery, and chicken broth.

• Drain the can of salmon, discarding any skin or bones, and stir it into the chicken broth mixture.

• Shape the mixture into a round loaf and put it in the crockpot, on top of the foil strips.

• Cover and cook for 5 hours on low or until a thermometer reads 160 degrees F.

• Transfer the loaf to a platter, using the foil strips as handles.
