Amazingly Nutritious Salmon

Salmon patties recipe is one of the simplest and healthiest dishes to make, and it doesn't require any special ingredients or equipment. It is simply making a few modifications to your traditional salmon patties recipes.

Salmon patties are a great way of adding more healthy fats from salmon- definitely one of the most nutritious fish. They have the advantage of including the bones and nutrients of the entire fish.


Salmon Patties Recipe

Ingredients:


14.75 ounce can of Red Sockeye wild salmon from Alaska

12 fat-free saltine crackers

6 green onions

2 eggs

Colander

Bowl

Skillet or frying pan

Canola Oil

Food processor

Fork


Preparation:

• Wash your hands thoroughly with soap and warm water. Rinse well.

• Put the crackers in the food processor and process so that they are broken into small pieces. Do not turn them into fine crumbs. You want the consistency to be larger than dry oatmeal. Set aside.

• Dice six green onions. Discard most of the green end, use just the onion portion. Set aside.

• Crack two eggs into the bowl and stir thoroughly with a fork, until mixed.

• Open the can of salmon and pour in a colander, over the sink.

• Rinse the salmon well with cold water. Do not remove any of the bones or skin. Normally I remove salmon skin, when making fresh salmon, as I hate the fishy flavor. But, when making salmon patties, this is not necessary. The bones also add a great health benefit.

• Squeeze out all excess water from the fish. Squish the little round bones if you want to break them into smaller pieces. They will crumble if you press them between your fingers.


• Combine the crackers, eggs and salmon in a bowl and mix. Then add in the diced green onions and combine well.

• Make into six round, evenly sized balls and form into patties.

• Cover the bottom of the skillet with the canola oil. Just a very thin - thin layer. Heat the oil over a medium high heat.

• Fry the patties, turning once. They should be golden brown on each side. Lightly salt, if desired. Delicious served with mashed potatoes and peas, creamed spinach or a green salad.
