Shrimp Stir Fry Recipe

Stir fry is one of the easiest dishes to make, especially when you're trying to eat healthy but don't have the time or energy to spend in the kitchen. The shrimp stir fry recipe on this page is made with soba noodles and it is rather quick and tasty. Soba noodles are whole grain noodles made from buckwheat flour that cooks in just a few minutes.
Shrimp Stir Fry Recipe
Ingredients:1/3 of a 9 oz pkg. Soba noodles, about a 1 inch diameter
1/2 lb Shrimp, shelled and deveined
1/2 Head Savoy (or Napa) Cabbage, cored and thinly sliced
1/2 Cup Peas
1/2 Cup Corn Kernels
1 Scallion, thinly sliced
1 Tsp Extra Virgin Olive Oil
1/2 Tsp Garlic Salt
Sriracha chili sauce, if desired
Marinade:1 Tbsp Sesame Oil
1 Tbsp Soy Sauce
1 Tbsp Organic Sugar
1 Tsp Garlic Powder
1 1/2 Tsp Ground Ginger
1/4 Tsp White Pepper
1/4 Tsp Black Pepper
2 Tsp Arrowroot Starch (or corn starch)
2 Tbsp Water
Preparation: • Marinate the shrimp: Dissolve 2 tsp arrowroot starch into 2 tbsp water. Add additional ingredients listed under marinade. Toss with 1/2 pound peeled and deveined shrimp. Marinate for at least 15 minutes or up to an hour.
• Prepare the ingredients: Thinly slice 1/2 head savoy cabbage and a green onion. Measure 1/2 cup each of peas and corn.
• Cook the soba noodles: Boil the soba noodles in salted, boiling water for time indicated on package (about 4 minutes). Drain and immediately rinse with cool water to stop the cooking process. (This is extremely important for soba noodles. They will get soggy if you let them sit for even a minute.)
• At the same time you begin heating the water for the noodles, heat a large deep skillet over medium high heat for about 5 minutes. Add 1 tsp olive oil and heat an additional 30 seconds, until oil shimmers.
• Place peas and corn in skillet. Stir fry for about a minute. Next, add the cabbage and stir fry a minute or two more. Finally, add the shrimp and remaining marinade. As soon as shrimp are pink and opaque, about 2 to 3 minutes, reduce heat to medium.
• Add cooked soba noodles and 1/2 tsp garlic salt to skillet. Toss until dish is heated throughout. Transfer to a serving dish or divide among plates. Garnish with green onions. Pass Sriracha hot sauce at the table, if desired. Serve and enjoy!
Notes: This dish is nut free but not gluten free as soy sauce contains wheat. To make it vegetarian, just marinate more of extra firm tofu instead of shrimps.
