Shrimp Stir Fry

Low GI and tasty shrimp stir fry
My shrimp stir fry is not only a low GI and a low calorie food but also a rather delicious way to a healthy diet.
I eat it at least once a week for lunch, and it has to be my favorite meal. This recipe gives me the satisfaction of eating well without depriving myself of good taste.
Ingredients: Fresh green beans
Carrots
Bellpeppers
Onion
Ginger
Garlic
Cabbage
Broccoli
Snap peas and shallots
Peas and corn
Some shrimps- peeled and deveined
You can omit some of the vegetables listed above and prepare it with whichever you have in the fridge that day.
Preparation: Cut the vegetables in chunks.
Bring some water to boil and add tiny bit of salt.
Add veggies except for onions, garlic, ginger and peppers and let them cook for a minute.
Then drain the juice. In 1/4th cup of this, dissolve 1 tsp of cornstarch and keep this aside.
Heat a teaspoon of oil and lighltly saute shrimps till just pinkish. Set this aside.
Add another teaspoon of oil and add some chopped ginger and garlic and chunky onion pieces. Saute for a bit and add the peppers.
Next add the remaining veggies.
Add soy sauce and hot sauce of your choice and 1/2 teaspoon tomato ketchup. Remember that the soy sauce is high in salt.
Lastly add a couple of teaspoons of cornstarch.
You are ready to eat!!
