Spaghetti Carbonara Recipe

Spaghetti carbonara recipe is a classic Italian sauce of bacon, eggs and cheese; it is both quick and easy to prepare. However we have made some adjustments to make it a little healthier while keeping it tasty.


Spaghetti Carbonara Recipe

Ingredients:


• 1lb whole wheat spaghetti- a box

• Rasher lean back bacon

• Two raw eggs

• Freshly grated parmesan cheese

• Freshly ground pepper

• Four whole cloves of garlic

• White wine- Pinot Grigio is preferred

• Chopped parsley


Preparation:

• Get a pot of water boiling, preferably in a dutch oven as it is wide and holds the spaghetti neatly.

• Cut the rasher lean back bacon into 1 inch pieces. How much bacon you need in this pasta carbonara recipe is entirely up to you. Usually the more bacon the better, but don't overdo it.

• Add the bacon pieces to a non-stick skillet with some olive oil and the garlic cloves. Turn on the heat to medium-low, definitely not too hot and wait for the sizzle, as it sizzles shake the pan around and cook until the garlic is golden brown and then remove the garlic--or, if the bacon finishes at the same time as the garlic you can keep the garlic in there.

• Keep cooking the bacon/pancetta until it is crispy and it has released lots of its fat, remove the fat and add a glass of white wine. The wine will bubble up but then it'll calm down and let it bubble away for a little bit until it reduces and you have a nice winey, bacony sauce.

• When the water is boiling, add lots of salt and then add the box of spaghetti. Stir it around a bit so it doesn't stick.


• Now, in a big bowl crack two eggs. Grate in some parmesan cheese—about a cup. Grind black pepper over it all and then stir it together with a fork.

• After six or seven minutes of boiling, taste a strand of spaghetti. If it is al dente—just right (not raw and not overcooked), add it to the bowl with the eggs and cheese and black pepper.

• Now keep stirring. The heat from the spaghetti is cooking the eggs but you don't want those eggs to scramble. So keep stirring. Add the winey bacon mixture and stir again.

• Finally chop some parsley and add lots of parsley to the bowl and stir one more time. Now grate a little more parmesan cheese on top, grind some pepper, and you are done.
