Spinach Artichoke Dip

These spinach artichoke dip recipes are wonderful with a lot of flavour but a fraction of the fat and calories that other spinach artichoke dips have. They can be served with some tortilla chips, toasted baguettes, or even pita bread and enjoyed warm, or right out of the refrigerator.

They don’t make you feel too guilty, right? And who could possibly resist the cheesy goodness of this dip that includes vegetables that are good for you anyway?


Spinach Artichoke Dip Recipe #1

Ingredients:


• 1 teaspoon Olive Oil

• 1 clove Garlic. Pressed And Finely Minced

• 1 whole Small White Onion Chopped

• 30 ounces, fluid Canned Quarted Artichoke Hearts, Leaves Separated

• 16 cups Raw Baby Spinach Leaves

• ½ cups Low Fat Cottage Cheese, Drained Of Liquid

• ½ cups Part-skim Mozzarella Cheese, Shredded

• ¼ cups Reduced Fat Sour Cream

• Grated Parmesan For Garnish


Preparation:

• Preheat oven to 350ºF. In a large nonstick skillet, heat olive oil over medium heat. Add garlic and chopped onion and saute until tender, about 2 minutes. Add artichoke pieces and heat for one minute. Add spinach leaves, 4 cups at a time, turning constantly until leaves have softened but not cooked through. Remove from heat.

• In a bowl, combine cottage cheese, shredded mozzarella, and sour cream. Stir in the vegetable mixture. Spray a large baking dish (I used small ramekins for individual servings but a large oval baking dish would work well) lightly with cooking spray. Add the mixture and sprinkle grated Parmesan on top.

• Place in the oven and cook until bubbling, about 35–40 minutes (individual dishes will need only about 20–25 minutes). Serve with flatbread triangles, pita chips, or sourdough slices.


Nutrition Values Per Serving:


75 calories, 2 g fat, 6 g protein, 6 g carbohydrates, 2.5 g fiber

Spinach Artichoke Dip Recipe #2

Ingredients:


• 6 oz steamed spinach

• 1-2 minced garlic cloves

• 1 can of cannelloni beans

• 1/2 cup of chopped scallions

• 2 tbsp. of lemon juice

• 2 tbsp. of fresh basil

• 1 can of artichoke hearts (NOT the kind marinated in oil)

• Optional: salt and additional spices to taste


Preparation:

• Steam and make sure to thoroughly drain the spinach (it holds so much water!).

• In a blender or food processor, puree all of the ingredients except for the artichoke hearts.

• In a medium mixing bowl, gently fold in the minced artichoke hearts with the mixture. Add your optional ingredients (salt & other spices) and enjoy!
