Panncakor- Swedish Pancakes
Swedish pancakes are one of Sweden's best-known food exports. Usually served with sprinkled sugar, lingonberry preserve and sour cream, they are traditionally eaten as a dessert on Thursdays with yellow pea soup. They may be made the size of a crepe or a silver dollar.I’ve been making these for as long as I can remember. When I was a kid, I used to wake up and make them for the family. I did it so often that I had the recipe memorized. It really couldn’t be easier.
Healthy Swedish Pancake Recipe
Ingredients:*2 Servings = 4 large pancakes3/4 C organic quick oats
1 1/2 C buttermilk (just add 1tbls white vinegar to some skim milk to make buttermilk)
3/4 whole-wheat flour
1 1/2 tsp baking powder
3/4 tsp backing soda
1/2 tsp cinnamon (although I usually end up adding more)
1/4 tsp nutmeg
1/2 tsp sea salt
1 egg beaten
1 tbls olive oil
1 tbls sucanut
Applesauce
Banana
Maple syrup (all natural and local)
Preparation: • Mix all the dry ingredients together, then add the milk, oil and beaten egg and whisk together. The mixture should be runny but not watery. If too runny add more flour. Heat a frying pan misted with olive oil.
• Once pan is nice and hot (I use about 4 or 6 on my gas stove top) drop a ladle full amount onto a the pan. You will notice some bubbles rising in the mixture. Once the bubbles slow down flip the pancake (I use two spatulas as the cakes are large).
• Layer each pancake with some apple sauce and top with some cut bananas and a little bit of maple syrup. Simple, healthy and amazing.
