Healthier Turkey Noodle Casserole

Healthier Turkey Noodle Casserole

Servings: 4 - 6 servings

Prep time: Approximately 15 minutes

Cook time: Approximately 30 minutes

Total time: Approx. 45 minutes



Turkey Noodle Casserole Ingredients:

Salt (I didn’t add any)

½ lb. extra wide egg noodles

1 Tbsp extra virgin olive oil

3 slices bacon, or turkey bacon, chopped

1 pkg. (about 1 1/3 lbs) ground turkey breast

1 lb. white mushrooms, sliced

1 medium onion, chopped

Black pepper

2 tsp. ground thyme or poultry seasoning

½ cup dry white wine

1 cup chicken stock or broth

½ cup heavy cream

¼ tsp nutmeg

1 Tbsp unsalted butter, softened

2 cups grated low fat Gruyere cheese (Swiss cheese)

1 cup plain bread crumbs

2 to 3 Tbsp chopped fresh flat-leaf parsley


My changes:

I didn't add any salt.

I used leftover bacon from that mornings breakfast, so I skipped the very first part and added the bacon when I added the cream.

I am not a big fan of Thyme so I only put 1/2 tsp; and added Paprika for the other 1 1/2 tsp (because we like Paprika).

I used Half & Half cream instead of heavy cream.

And I only used 1/3 cup of bread crumbs (I think 1 cup would be way too much).



Directions:

Cook noodles, al dente. Drain well and return to the pot.

Preheat a large, deep skillet over medium-high heat. Add the oil and the bacon. Cook for 2 to 3 minutes. Add the turkey and brown it.

Move the meat over to one side of the pan & add the mushrooms and onions, cook for 3 to 5 minutes and then stir the meat and veggies together.

Season with salt & pepper and thyme or poultry seasoning. Cook for another 5 minutes. Add the wine and deglaze the pan. Stir in the stock and bring to a bubble, then stir in the cream and reduce the heat to low. Add the nutmeg and stir. Taste and adjust seasonings if necessary.


Preheat the broiler to high. Combine the noodles with the turkey and sauce. Grease a casserole dish with the butter (I used a pan; I wouldn’t suggest a glass or ceramic casserole dish under the broiler).

Transfer the turkey-noodle mixture to the dish and top with Gruyere cheese and then bread crumbs.

Place the casserole 8 to 10 inches from the broiler and brown for 2 to 3 minutes, or until the cheese is melted and the crumbs are brown.

Garnish the turkey noodle casserole with the parsley.
