Cabbage Salad Recipe
Here is a healthy multi-coloured cabbage salad recipe with a beautiful sauce of Dijon mustard, pomegranate syrup, balsamic vinegar, lemon juice, extra virgin olive oil and salt. Enjoy!
Multi-coloured Cabbage Salad Recipe
Ingredients:
• 1 small white, crunchy cabbage for salad
• 1 red cabbage
• White part of 2 medium leeks
• Half a bunch of parsley
• Half a bunch fresh dill
• 1 red capsicum – pepper
• ½ aragula
• Half a bag lamb’s ear
• 1 cup Brussels sprouts
• 1 cup cooked wheat
• 1 cup corn
• 1 cup walnuts
• 4-5 pieces of pickled cornichons.
Sauce:
• 1 tsp mustard
• ½ cup pomegranate syrup
• Half a lemon juice
• 1 cup extra virgin olive oil
• 1 tsp salt
• 1 tablespoon apple cider vinegar or balsamic vinegar
*Put them all in a separate bowl and then mix well.. You may keep this sauce for a maximum of one day in the fridge..
Preparation:
• Put two to three glasses of water and a tea spoon of soda or carbonate and a little salt and brussels sprouts and boil them for 1 – 1.5 minutes, throw them into icy cold water, dry them in a veggie dryer.
• Cut your red cabbage into four pieces, rub them with salt and sugar, chop them into thin and long pieces, let them sit for 5 minutes, then wash and dry them in a dryer.
• Cut the red peppers into four pieces, chop them into thin and long pieces.
• Wash arugula, lamb’s ear, parsley and dill in water with a bit of vinegar and dry themin veggie dryer.
• Ensure wheat, corn and all the other ingredients are blended well in a large bowl, add the sauce and walnuts, serve and enjoy!
