Here is a yummy and healthy banana bread recipe.. Sweet and slightly sour taste that goes very well with tea or coffee and sour cherry jam or a jam of your choice. It is low in fat, not too sweet but still tastes like cake with a lovely banana flavor.

Healthy Banana Bread Recipe

First Group of Ingredients (Dry):

  • 2 cups sifted flour (1 cup white and 1 cup wholemeal)
  • 3/4 teaspoons cinnamon
  • 3/4 tablespoons baking soda
  • 1.5 teaspoons baking powder
  • 1 cup chopped hazelnuts
  • 1.5 cups chopped walnuts
  • 1 pinch salt

Second Group of Ingredients (Liquid):

  • 100g butter at room temperature
  • 3 large eggs
  • 3 large bananas
  • 3 tablespoons plain yogurt
  • 1/2 cup sugar

 

Instructions:

The method applied in this banana bread recipe is the one followed in making of the common pan bread..

  • Mix the two groups- dry and liquid of ingredients very well in their own groups. Then add the second- liquid mixture into first- the dry mixture.
  • Blend the mix with a spatula, but don’t overdo it.
  • Heat the oven to 180 degrees C and place the grill rack at the bottom of the oven.
  • Lightly grease a large bread pan with olive oil, sprinkle a thin layer of flour to prevent sticking to the bottom.
  • Pour the thoroughly blended mixture layer by layer into the pan with the help of a spatula , then lightly level the top with the spatula without pressing or forcing it.
  • Place the pan at the bottom of the rack on the grill and cook for roughly an hour.
  • Remove the bread out of the pan and let it sit for a short period of time, and serve it with jam and tea or coffee.
