Mexican Corn Salad Recipe

 

This tasty and healthy Mexican corn salad recipe has it all.. Lettuce, beans, corn, peppers, dill and parsley with a lovely dressing..

Mexican Corn Salad Recipe

Ingredients:

  • 1 cup cooked Mexican beans
  • 1 cup baby corn
  • 1 medium sized Iceberg lettuce
  • 1 Lolorosso lettuce
  • 2 red peppers
  • 4 sprigs of fresh green onions
  • Half a bunch of dill
  • Half a bunch of parsley
  • 3 small pickled cucumbers

For the sauce:

  • 4 tablespoons olive oil
  • 1 teaspoon mustard
  • 1 tablespoon vinegar
  • Juice of 1 lemon
  • Salt to taste

 

Preparation:

1 – Wash and dry parsley, dill and scallions.

2 – Thinly chop them and put them into a large bowl.

3 – Finely slice red peppers.

4 – Dice the pickles (small cubes).

5 – Place the beans, corn, red peppers, pickles and greens into a deep bowl and mix them.

6 – To prepare the dressing, put the olive oil, lemon juice, mustard, vinegar and salt in a bowl and whisk them.

7 – Add the dressing over the salad. Wait for 15 minutes and stir it. Feel free to garnish with sliced tomatoes.
