Moist Carrot Cake Recipe
This healthy and delicious moist carrot cake recipe has the wholemeal flour, molasses and olive oil instead of white flour, sugar and standard oil. It also has quite a bit of carrots and walnuts. You may also add sultanas or raisins as well, to make it even more interesting.
Ingredients:
- 2 cups wholemeal self raising flour
- 2 level teaspoons bicarbonate of soda
- 4 eggs at room temperature
- 1 teaspoon cinnamon
- Half a teaspoon of sea salt
- Half a teaspoon grated nutmeg
- Half a teaspoon powdered cloves
- 4 grated carrots
- 1 cup walnuts- crushed
- 1 cup olive oil
- 1 cup molasses (use 150g dark brown soft sugar if no molasses)
For the topping:
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon and some more for dusting
- 225g- 8oz Quark cheese- very low fat soft cheese
- 25g (Less than 1 oz) caster sugar
For the syrup:
- 1/2 tablespoon lemon juice
- Juice of a small orange
- 40g- 1.5oz dark brown soft sugar
- Preheat oven to 160 degrees,
- Sift together flour and bicarbonate of soda in a bowl. Add the remaining bran in the sieve into the flour. Stir in all the spices and salt and mix well.
- Grate the carrots in a separate bowl and add the crushed walnuts.
- In another bowl, whisk the eggs for ten minutes with a spoon or whisk for three minutes by an electric hand whisk.
- Add the molasses and olive and mix them well.
- First add the flour mixture then the carrot and walnut mixture to this. Stir them with a wooden spoon until everything is blended very well.
- Transfer the dough to the prepared- greased oven tray.
- Cook for about an hour at the oven’s second shelf from the bottom.
- While the cake dough is on the oven, mix the Quark cheese, cinnamon, vanilla and caster sugar well to prepare the light topping, then put it in the oven after covering it.
- Whisk together the sugar and fruit juices in a bowl to make the syrup.
- When the cake is out of the oven, stick a tooth pick all over and pour the syrup quickly and evenly all over it.
- Let the cake sit on the side for a bit to cool down and to absorb all the syrup.
- Remove it from the cake tray and spread the topping over and sprinkle a little cinnamon on top.
- Serve it with tea or coffee and enjoy!
