Muhammara
You can easily make Turkish muhammara or fenugreek paste easily at home, to have in your Turkish or even English breakfasts. Here are three different ways of making cemen – muhammara or fenugreek paste in your own kitchen, enjoy!
Turkish Muhammara Recipe #1
Ingredients:
• 3 tablespoons red pepper paste
• 5 tablespoons tomato paste
• 1 teaspoon pennyroyal
• 2-3 teaspoons thyme
• 1 teaspoon basil
• 1 teaspoon coriander
• 2 teaspoons fenugreek powder
• 2-3 cloves of garlic
• 1 ½ cup bread crumbs
• 1 ½ cup ground walnuts
• ½ tea spoon ground cumin
• 1 teaspoon sugar – sugar helps reveal the spices in cooking
• ½ teaspoon ground cinnamon
• ¼ teaspoon ginger
• 1 tablespoon roasted sesame seeds
Preparation:
• Blend all ingredients and add olive oil at the end, let it sit in the fridge overnight.
• Add olive oil to make it spreadable enough on bread.
• You may keep it in the fridge for up to one week or much longer in the freezer.
Turkish Muhammara Recipe #2 : Sosyete Cemeni
Ingredients:
• 1 cup coarse crushed walnuts
• 1 cup tomato paste
• ½ cup red pepper paste
• 3 teaspoons ground red pepper,
• ½ tea spoons crushed red pepper,
• 5 pieces of ground Italian bread sticks
• 6-7 cloves crushed garlic
• 1 small tea cup olive oil
• 1/2 lemon juice
• 1 teaspoon ground cumin
• 1 teaspoon black pepper
• 1 teaspoon thyme
• Water and salt to taste
Preparation:
• First mix ground bread sticks, paprika, cumin, crushed red pepper, black pepper and thyme.
• Then add red pepper paste, tomato paste, crushed garlic, olive oil and lemon juice and slowly add enough water to reach the desired thickness and salt to taste.
• Keep it in the fridge in a sealed container overnight and add a bit more salt and water if necessary. Serve and enjoy. Bon appetite!
Turkish Muhammara Recipe #3
Ingredients:
• 4 tablespoons tomato paste
• 2 tablespoons red pepper paste
• 5 large cloves garlic
• 1 cup ground walnuts
• 1 table spoon ground Italian bread sticks
• Cumin, mint and paprika to taste
• 1 teaspoon fenugreek powder
• 1 tablespoon pomegranate syrup – no need if you’re using home made tomato paste
• 5-6 tablespoons extra virgin olive oil
• 1 tablespoon yogurt- do not put any if you will store it for a while
Preparation:
Mash the garlic, crumble the bread, mix them with all the other ingredients and put the mixture in the fridge. This is simply perfect for your Turkish breakfasts, or you may use it easily in your Turkish cig kofte recipe easily. Enjoy!
