Olive Paste
Here are three different tasty olive paste recipes that I hope you will enjoy. You will see that the first olive paste with sardines is different to any olive paste you tasted before. Second one is a green olive paste and the third one is a black olive paste with a different preparation technique and some special herbs in it. Enjoy!
Black Olive Paste with Sardines
Ingredients:
• 350 g black olives
• 2 cloves garlic
• 90 g capers
• 6 pieces of fillet sardines in oil
• 4 thyme twigs
• 100 ml of olive oil
• 1.5 teaspoon grated lemon peel
• Sea Salt and black pepper to taste
Preparation:
Remove the olive seeds. Crush the garlic and filter the capers. Remove the thyme leaves from the twigs. Puree all ingredients in a blender. Flavour it with sea salt and black pepper.
Green Olive Paste Recipe
Ingredients:
• 60 large green olives
• 1.5 tablespoon capers
• 2 cloves garlic
• 2 tablespoons grated almonds
• 6 tablespoons extra virgin olive oil
• 3 teaspoons ground cumin
• 3 teaspoon ground paprika
For Decorating:
• Cocktail olives
• 2 slices of lemon
• Red pepper flakes
Preparation:
• Remove the seeds of olives. Peel the garlic. Puree cumin, garlic, capers, olives and chopped almonds, red pepper and olive oil in a blender.
• Place the mixture on a serving plate. Sprinkle the red pepper flakes. Garnish with lemon slices, sliced cocktail olives, serve and enjoy..
Black Olive Paste Recipe
Ingredients:
• 1/2kg soft olives- seeds removed and boiled in a glass of water, filtered and pureed in a blender.
• 2 tsp thyme
• 2 tsp coriander
• 2 tsp of pennyroyal
• 1 tsp red pepper flakes
• ¼ tsp lemon salt
• 1 cup olive oil
• ¼ tsp ground cumin
Preparation:
Blend olives and spices in a blender and let it sit overnight.
Black Olive Paste with Anchovies
Ingredients:
• 400 g good quality black olives
• 50 g anchovies (optional)
• 2 teaspoons capers, pickled
• 2 cloves garlic
• 5 tablespoons extra virgin olive oil
• 1 pinch of fresh thyme
• 1 pinch of rosemary
• 1 pinch freshly ground black pepper
Preparation:
• Make sure your olives are not too salty. Remove all the black olive seeds and put all the ingredients except for olive oil in a food processor.
• Add the olive oil gradually, making sure you reach the consistency of a puree. Serve on toasted bread and enjoy!
