Spaghetti and Meatballs Recipe
With my special Turkish spaghetti and meatballs recipe, I tend to get a lot of compliments from friends and family. I try and use a nice mixture of beef and chicken for meatballs, I just love the texture and the taste!
You may adjust the ingredients- herbs and spices according to your taste, whether you choose fresh or dried herbs is totally up to you. I try and use fresh ingredients as much as I can, when I have them in my fridge.
Meatballs:
• 1 1/2 lbs- 700g minced meat- beef and chicken
• ¾ cup grated cheese of your choice- I prefer parmesan
personally!
• 1/3 cup chopped flat-leaf parsley
• ½ cup milk
• 1/2 cup crumbled bread
• 2 beaten eggs
• ½ cup chopped onion
• 2 cloves chopped garlic
• ½ teaspoon ground black pepper
• 1 teaspoon salt
• 2 teaspoons pomegranate syrup
Sauce:
• 2 medium cans chopped tomatoes
• 1 small onion, finely chopped
• 1 cup beef stock
• 4 cloves garlic, minced
• 3 tablespoons extra virgin olive oil
• 1 teaspoon salt
• 1 teaspoon white sugar
• 1/2 teaspoon crushed red pepper flakes
• 1/2 teaspoon ground black pepper
• 5 leaves fresh basil leaves
• 1 teaspoon dried mint
• 1 bay leaf
Pasta:
• 500g spaghetti
• Salt and canola oil
• Plenty of water
Preparation:
• In a large bowl, combine your ground beef and chicken, bread crumbs, grated cheese- parmesan or any cheese of your choice, chopped onion, garlic and parsley as well as your pomegranate syrup or Worcestershire Sauce.
• Mix them all together with your hands- well please make sure your hands are clean : ), then add the salt and pepper and your ½ cup of milk and continue mixing the meatball ingredients very well and roll them into small balls- size is actually up to you but try not to make them too big, so that they cook properly inside. Cover the bowl and place it in the fridge until the pasta and the sauce are cooked.
• Put plenty of water- at least three times your pasta in a large saucepan, add your salt and canola oil and boil it. When the water boils, add your spaghetti pasta and cook al dente. Drain the pasta in a colander, do not wash your pasta with cold water as you will lose the nutrients. Bring your pasta back into its saucepan and add some extra virgin olive oil.
• Sautee garlic and onion with some canola oil until they are cooked but not brown or burnt! Add the red pepper flakes, black pepper, white sugar, beef stock, chopped tomatoes, basil and bay leaf and cook for about five minutes. Then take your meatballs out of the fridge and place them into your tomato sauce, cook them for 25 minutes.. Then finally add your mint and extra virgin olive oil and let it sit for a bit.
• Now serve your spaghetti topped with meatballs in tomato sauce; sprinkle some grated parmesan cheese on top.
