Sesame Spinach Feta Balls Recipe
Ingredients:
- 100 grams feta cheese – grated
- 500 grams spinach- chopped
- 1 cup parsley- chopped
- 3/4 tablespoons of butter
- 1 large onion- grated
- 1 tablespoon white flour + 1/2 tablespoon wholemeal flour
- Sea salt, freshly ground black pepper
+
- 1.5 cup flour (half preferably wholemeal flour)
- 3 eggs
- Raw sesame seeds
- Extra virgin olive oil ( to fry them)
Preparation:
- Steam spinach- without water in a saucepan for a few minutes.
- Drain the water completely off the spinach leaves, chop them nicely on a chopping board, and place them in a large bowl.
- Add the grated white cheese, grated onion, chopped parsley, stir in butter and spices and start to knead.
- If the dough is runny, add a little more flour (1 tablespoon) and continue to knead it. Don’t worry it won’t be a solid dough.
- Put your hand in water and take walnut sized pieces from the dough and lay them on the greased oven tray or baking paper.
- Cook them in 180 degrees celcius preheated oven for 15 minutes and remove them from the oven.
- In the meantime, put a little olive oil in the frying pan.
- Let the spinach cheese balls sit for a bit to cool down then rub them first on flour, then on egg, then on raw sesame seeds then put them into the pan and fry both sides. But be careful to not overcook them as you might burn the sesame seeds. (A couple of minutes is more than enough).
- Serve them warm with a sauce of your choice. I prefer the Asian garlic chili sauce, soy sauce and Turkish pomegranate juice.
